These waffles make the perfect autumn treat. They are genuinely worth the try and even better than ordinary waffles. Serve with your favourite nut butter and raw honey. The buttermilk could be replaced with coconut/almond milk and lemon juice to make it dairy-free as well.
Nutritional Notes
This recipe was originally created with gluten-free oats. I substituted the oats with 1/2 cup tapioca flour and 1/2 cup rice flour. It is important to note that rice flour and tapioca flour has a high glycemic index. The sweet potato in the waffle mix together with nut butter as topping will improve the GI but it will still be quite high. Mrs. Spoon recommends eating it after a morning exercise as an occasional treat and to limit portion size.
