I stumbled across the Thoroughbread bread food stall at a Wellington market and was blown away by their gluten-free bread selection. It tasted so different from the store-bought, bleached and highly refined varieties. It is no wonder; Rebecca Rolls, founder, has had 30 years’ experience of experimenting with gluten-free bread. Furthermore, she even goes to the lengths of grinding the whole brown rice just before baking to add to the flavour, freshness and nutrition.

From the outset she was determined to bake bread that would meet the following criteria:

  • taste like real food and be made with real food
  • be nutritious
  • have good texture and usability

Although her path to success was paved with many trials,  she eventually built a successful business that supplies to outlets throughout the whole country.  Her range includes a variety of paleo bread, sourdough, sandwich bread and hamburger buns.
